Happy Fall Y'all!



Can't you just feel it in the air?!  It's finally that gorgeous time of year when the wind starts blowing and the leaves start rustling.  The color schemes created by the trees and shrubs are just breathtaking and the slight chill in the air means only one thing:  CHRISTMAS IS RIGHT AROUND THE CORNER!!!!  Okay, now that I got that out of my system,  this time of year also means one other thing:  Pumpkin.  Oh how I love pumpkins.  They are such a versatile gourd.  Especially in the kitchen!  Today I am sharing with you a recipe creation of my own!  Okay, that's a lie.  I have to give full credit for this recipe to my roommate, Kathryn.  And I think she gives credit to Weight Watchers.  Anyways, this morning I made Pumpkin muffins for breakfast and I might have to confess that I have already eaten 3 so far today.  They are just so tempting.  And of course they always win in my never ending battle of to eat or not to eat.  The best part about this recipe is that there is hardly a recipe at all.  Just 3 lonesome ingredients are all that stand in between you and your own delicious batch of pumpkinness!!



Simply add 15 oz. (1 small can) of pumkin to a traditional box yellow cake mix.  Add one cup of water and bam.  Pumpkin muffin mix.  Bake these at 350 for about 25 minutes and you are all set!


I didn't even let these suckers cool.  I ate them piping hot with a cup of delicious coffee (also compliments of my roommate, Kathryn-what would I do without her?).  I think I have had a great day so far just becasue of this wonderful start to my day!!

Well, I don't have much to post about today, but I just thought I would share with you that as of this past Monday, I am 21!!!!!!!!!!!!  I celebrated my birthday at home with my family.  Yes, in the new house.  It was so fun and relaxing and I am glad I got to share this special time with my family!  Here are a few pictures of the cake my mom made.  My sister Theresa and I are 4 years and 1 day apart, so we always have our birthday celebration together.  (Hints the 21-17 candle arrangement my sister, Ashton, thought of haha)  The cake was delicious!  It was a raspberry lemonade cake with raspberry jell-o mixed in throughout.  The frosting was a combination of cool whip and whipped vanilla frosting. mmmm.  Then, my mom added the cute swirls on top.  She's the best  :)

Well, long story short.  My grandmother has been buying me place settings of Franciscan Desert Rose china since she found out I liked it last year.  Allison found these adorable salt/pepper shakers in the same pattern.  Have you ever seen anything as cute???



Well, that's it for today.  Hope you have been more put together this short week than I have.  I loved the holiday, but it definitely caused me to be a bit overwhelmed for the rest of this week.  I will have a recipe for you soon!!
