Summer Fajitas




Well, it has been quite a week!  I have been bored because I have been home alone the past few weeks, but they have also been a very relaxing two weeks.  Now, my sisters are out of school, and we are headed to the campground with my grandparents for a few days...should be interesting.

Since the girls were out of school yesterday, we spent the day playing tennis and catching some rays.  Unfortunately I got a few too many and look a bit lobsterish today.  We also had plenty of time to cook up a delicious dinner dinner last night too!

To make these delicious fajitas all you need are a few simple ingredients.


  • 1 lb. boneless skinless chicken thighs, cut into strips
  • 1 1/2 tsp. chili powder
  • 2 cloves garlic
  • 5-6 small sweet peppers
  • 2 large portabello mushroom caps
  • 1 medium onion
  • 3 tbsp. olive oil
  • greek yogurt
  • 10 fajita/soft taco shells
Once you've gotten all of that together, the rest is just as simple!

Combine the chicken, garlic, and chili powder.  Stir and let sit for a while to "marinade".


While that mixture is setting, cut the peppers, mushrooms, and onion to your preferred size.  I cut the peppers into strips, cut the onion into about 12 wedges, and diced the mushroom caps.



Also during this time, wrap the tortilla shells in foil and place them in the oven at 350 until you are ready to serve them.  After the chicken has soaked up the chili powder for about 10 minutes, add 1 1/2 tbsp. olive oil to a cast iron skillet and let it get hot.  Add the chicken and brown the outsides for about 5 minutes.  (you don't want to cook the chicken thoroughly just yet)



Transfer the chicken to a bowl and sautee the peppers and onion for about 3 minutes, until slightly brown and tender, and then add the mushrooms and cook the veggies for about 5-10 more minutes.



Add the chicken back to the veggies and sautee all of the ingredients together until the chicken is no longer pink inside, about 5 more minutes.



Now, just add the chicken/veggie mixture to the shells and top with yogurt for a delicious, healthy, and simple dinner.  We cooked a pan of spanish rice to enjoy with our fajitas  :)




 Also, I must share with you that many youngest sister just graduated kindergarten on Monday.  My sisters and I didn't have a chance to do much for her before then, so when she got home from dance on Tuesday night, we surprised her with a cake and the newest toy craze i the kindergarten world-squinkies.
